In the pursuit of pushing the boundaries of taste, we are proud to introduce Emerald Fairy: a Strawberry and Apple Sour Gin that makes noses wrinkle and taste-buds tingle.
Fresh strawberries (100kg) sourced from a local South-East Queensland Farm, combined with aromatics of crisp green apple, deliver a punch of sour. The first of its kind in the Australian Gin Market, it's a Gin that does most of the talking, but is best served with a good-quality tonic.
"This is all about challenging the perception of what a Gin should be," says White Oat Head Distiller, Tudor Duxbury.
"The idea came about when a nine-year-old challenged me to recreate his favourite sour lollie, the WarHead. Sheepishly, I accepted the challenge, and I'm glad that I did. It dawned on me that this was a road untrod in the Gin game, and bringing it to life took me on an experimental journey into the world of sour gins. The final destination is something I’m quite proud of.”
This is the first instalment of what will be a trilogy of sours to come from White Oat, and it's available on our online store and select bottle shops & venues.
